After six years in investment banking, Jose left finance to work as a line cook and runner in four kitchens (including La Mar Cebicheria in Lima and Maito in Panama City). He then took to UC Berkeley to explore ways to reimagine the kitchen using robotics, where he co-founded Caldo.
